This is a really tasty, healthy bowl of goodness! Perfect for Spring to support the Liver and Gallbladder energy.
Gives 4 small portions or 2 big ones ;)
It starts with a base of grains - choose your favourite - I prefer black or brown rice or quinoa.
Then a lentil salad.
Take 200g of puy or green lentils - cook according to instructions or open the tin(!). Then add a dressing:
Dressing for the lentils
1 tbsp apple cider vinegar
Zest of 1 lemon
2 tbsp olive oil
1/2 tsp fennel seeds - dry toast - then crush
Mix together well
Next comes a Carrot Salsa, Smoky Roast Sweet Potato, Lemon Spinach and a green veg of your choice - I used green beans lightly steamed.
Carrot Salsa
250g Carrots - cut in chunks - put them in a baking tray with 1 tbsp olive oil - roast in the oven at 180 for 20 mins
Put roasted carrots in food processor with
1/2 tsp coriander seeds
1/2 tsp ground cinnamon
1/2 tsp cumin seeds
Pinch chilli
1/2 tsp salt
1/4 tsp black pepper
1 tbsp lemon
2 fl oz water
Blend!
Roast sweet potato
Cut 250g sweet potato into 1 inch chunks
Mix with in a baking tray with 2 tbsp olive oil and 1 tsp smoked paprika
Roast for 20 mins at 180
Lemon Spinach
50g spinach wilt - put in boiling water until leaves just start to wilt - drain -
Add juice of a lemon
Then add:
Yogurt Tahini Dressing
100ml yoghurt
1 tbsp tahini
1/2 tsp salt
Mix Well
To serve
Sprinkle with fresh Mint or Parsley
